Restaurant Charlie

 

The spacious main dining room, with 20 foot tall ceilings and a walk-through wine cellar offers such dishes as Slow Poached Tasmanian Ocean Trout with Savoy Cabbage and Trout Roe-Shiso Vinaigrette; Poached Maine Lobster in Yellow Curry with Lotus Root, and Steamed Casco Bay Cod with Lemon Curd. There are also many non-seafood offerings such as Seared 32 Day Dry Aged Rib Eye with Roasted Garlic, Fingerling Potato Puree and Rosemary; Organic Lamb Rack with Braised Shoulder, Manchego Cheese and Cumin, and True Japanese Kagoshima Beef Strip Loin with Ponzu and Chinese Black Mustard.


BAR CHARLIE

Bar Charlie is “a restaurant within a restaurant.” This intimate, counter only seating area offers guests the ultimate expression of East meets West Trotter style. Here guests experience the ultimate Kaiseki-style Charlie Trotter culinary experience as they enjoy either a eight or fourteen course menu featuring the most delicate sushi, sashimi and other culinary creations prepared right before their eyes! The menu will change frequently, as it is based on ingredients received daily. Expect to enjoy items such as Dungeness Crab Salad with Avocado, Cucumber, and Amazake; Sake Steamed Abalone with Fresh Horseradish, Water Chestnuts and Sea Water Emulsion; Chu-toro with Yuzu and Daikon; Yakitori Grilled Octopus with Sunchoke Puree and Kanzuri. Imagine everything known about traditional sushi, then add in Chef Trotter’s twists and surprises and there you have it! This unique, exclusive experience is one that should be reserved well in advance of desired dining date.


THE KITCHEN TABLE LOFT

Hovering high above the kitchen, this glistening stainless steel and glass loft provides a bird’s eye view of the symphony of activity in Chef Trotter’s kitchen. The “chef’s kitchen table” accommodates up to eight guests and offers a spontaneous degustation menu highlighting the breadth of uniquely personal Charlie Trotter cuisine.

Regardless of which culinary experience is chosen, know that the Trotter team of Sommeliers is at the ready to augment the dining experience with a customized wine program including bottle selections, sake, and wine by the glass pairings.


DRINKS BAR

In keeping with Chef Trotter’s pursuit for using only fresh and pure seasonal ingredients, it only seems natural that his cocktail menu would follow suit. This is an exciting new area for Chef Trotter, as his atelier in Chicago does not offer cocktails – only wine, select artisanal beers and after dinner digestives.

The Drinks Bar offers two cocktail menu styles: Vintage pre-prohibition classics and Modern. Samples of the current menu offerings are listed below:

  • Vintage Pre-Prohibition:
    The Sazarac, a true classic from the mid 1800’s, was developed by Antoine Amedee Peychaud in New Orleans and is known as America’s first cocktail. Restaurant Charlie’s is made with a splash of Absinthe, Hine Triomphe Cognac, Bulleit 6 Year Old Bourbon, organic simple syrup, Peychaud’s Bitters, Angostura Bitters and fresh Meyer lemon peel.

    A modern take on a vintage classic is the New Style Manhattan with Bulleit 6 Year Old Bourbon, Noilly Prat Sweet Vermouth Sorbet, and our Bing Cherry Cotton Candy, garnished with a stemmed Bing cherry ice cube!
  • The Moderns:
    The Ruby Fresh has its roots in the classic Greyhound but breaks tradition with a Japanese twist. Restaurant Charlie uses Square One Organic Vodka, house made Yuzu, fresh ruby grapefruit juice and essence of grapefruit with a ginger candied grapefruit sliver.

    The Yucatan Flip is full of flavor and made with Hurradurra Silver Tequila, Cointreau, freshly squeezed Meyer lemon and orange juice, fine cracked black pepper, organic egg white, and a hint of Agave nectar.

RESERVATIONS AND PRIVATE DINING

Restaurant Charlie is located on the Casino level of the Palazzo Resort and is open for dinner seven days a week.

Private Dining options are available for 12 to 30 guests. The restaurant is also available for complete buyout, varying reception sizes and style of offerings all custom to the client’s request.
